Cook 3-4 boneless chicken breasts in water about 1/2 hour. Season with salt and pepper. Cool and chop into bite size pieces.
Chop 1 onion and saute in 2 T butter.
Add:
3 cans great northern beans
1 sm can chopped green chilies
2 cans chicken broth
1 1/2 T cumin
2 T chili powder
Add chicken to bean mixture and simmer 30 minutes. Serve with white tortilla chips. Top with chopped onion or chives and shredded monterey jack cheese. Serves 6.
