YUMMY POTATOES

Really, these are Funeral Potatoes. But, better. So, skip funeral hopping tonight, and just make a pan of these instead.

32 oz. shredded frozen hash browns
1/2 cup melted butter or margarine
1 can cream of chicken
12 oz. grated cheese
1/2 cup milk
1 cup sour cream
1 t. salt
2 cups crushed cornflakes
2 T. melted butter

Thaw potatoes. Melt 1/2 cup butter in 9x13" pan. Layer 1/2 of the potatoes in the pan. Mix next 5 ingredients. Pour 1/2 of it over the potatoes. Layer remainder of the potatoes and cheese mixture. Top with cornflakes and 2 T. melted butter. Bake 45 minutes @ 350 degrees uncovered.

GLORIFIED BAKED MACARONI AND CHEESE

This is some serious macaroni and cheese. Just reading the recipe alone will make you gain 3 pounds.
4 cups macaroni, uncooked
½ cup butter
¼ cup flour
1/8 tsp. salt
2 1/2 cups milk
1 cup cream
4 cups variety of shredded cheeses, including sharp cheddar
4 oz. (1/2 cup) Velveeta, cubed
1 cup plain bread crumbs
2 T. butter, melted
Preheat oven to 350 degrees. Cook the macaroni according to package directions, decreasing time to 3 minutes. Drain well. Meanwhile, melt butter in saucepan, blend in flour and salt. Cook until mixture is smooth and bubbly. Gradually add milk and cream. Cook until it simmers, stirring constantly for 1 minute. Gradually stir in cheese until almost melted. Gently stir in pasta. Pour into a lightly sprayed casserole (13 x 9 inch). Top with bread crumbs. Drizzle with melted butter. Bake for 20 – 25 minutes until golden and bubbly.
