FLAN FOR DUMMIES


1 can sweetened condensed milk
4 eggs
scant cup of heavy cream
2 tsp. vanilla
1 cup of sugar and a little water

Make your caramel by putting the sugar and the little bit of water in the microwave for a couple of minutes until the sugar is melted and a golden caramel cover. Working quickly, spread the caramel on the bottom and up the sides of six custard cups.

Beat the eggs. Add cream. Beat more. Add the condensed milk. Stir until thick and gooey. Add vanilla.

Pour into the custard cups. Place the cups into an inch or two hot waterbath and bake in a preheated 350 degree oven for about an hour. Stick a butterknife in the middle of the flan to see if it is ready. If it is, it will be clean.

Let chill in the refrigerator for several hours. To serve, invert on a plate.
