CREAM CHEESE MINTS

Great for bridal and baby showers.

1 (3 oz.) pkg. Cream cheese, softened

1 T. butter, softened

3 cups confectioners’ sugar

2 drops peppermint oil

food coloring

In a large bowl, combine cream cheese and butter. Stir in the peppermint oil and food coloring if desired. Add the confectioners’ sugar. Combine thoroughly.

Roll mixture into small balls, and place on waxed paper. Flatten with a fork dipped in confectioners’ sugar. Let dry for about 2 hours on waxed paper, then freeze or refrigerate.

Option: Roll the mixture into small balls then roll in granulated sugar. Press into candy molds. Immediately unmold by dropping them out.
